What you'll need

Ingredients:
2 cups unbleached AP flour
1 cup Ulu dry roasted Macadamia nuts
3/4 cup of sugar
1/4 teaspoon salt
2 teaspoons freshly ground Ulu Kona coffee (plus about 40 extra whole beans)
2 teaspoons freshly ground Ulu Kona coffee
12 tablespoons (1 1/2 sticks) unsalted sweet cream butter
1 tbs + 1 tsp dark rum or brandy
1 1/2 teaspoons pure vanilla extract
Step by Step
Preheat oven to 350, then combine flour, Macadamia, sugar, and salt in the food processor and pulse until nuts are finely ground. Then add fresh Ulu Kona coffee and pulse to mix.
Cut butter into small pieces and add to mixture until it looks damp and crumbly.
Drizzle in vanilla and dark rum and pulse until the dough starts to form around the blade. Remove and knead by hand until fully mixed and refrigerate overnight.
Work dough to soften, then roll out to about 1/4 inch of thickness between 2 sheets of wax paper.
Using a cookie cutter, cut out cookies and place them on an ungreased cookie sheet, placing them about 1 inch apart. Press one whole coffee bean in the center of each cookie. Then bake for 12-14 minutes.
